Healthy Vegetarian Cooking: Apple Broccoli Salad

Apple Broccoli Salad presented at the 2020 JKYog International Yoga Fest - quick and easy healthy vegetarian cooking:

Preparation Time: 15 minutes

Servings: 4

Ingredients:

  • Broccoli Florets - 2 cups
  • Red Apple diced - 1
  • Carrots shredded - 1⁄2 cup
  • Pecans - 1⁄4 cup
  • Dried Cranberries - 1⁄4 cup
  • Pumpkin Seeds -1 tablespoon

Creamy Dressing:

  • Mayonnaise Eggless - 1⁄4 cup
  • Greek Yogurt - 1⁄4 cup
  • Lemon Juice - 1 tablespoon
  • Sugar - 1⁄2 tablespoon
  • Salt - as per taste
  • Pepper - 1⁄4 teaspoon

Instructions:

  1. In a large bowl combine broccoli, carrots, apples, pecans, and dried cranberries. Set aside.
  2. Prepare the dressing: In a bowl, whisk together mayonnaise, Greek yogurt, lemon juice, sugar, salt and pepper.
  3. Add the dressing to the salad and toss to coat.
  4. Sprinkle pumpkin seeds on top to garnish.

Note: Tastes better when served chilled.
