Apple Broccoli Salad presented at the 2020 JKYog International Yoga Fest - quick and easy healthy vegetarian cooking:
Preparation Time: 15 minutes
Servings: 4
Ingredients:
- Broccoli Florets - 2 cups
- Red Apple diced - 1
- Carrots shredded - 1⁄2 cup
- Pecans - 1⁄4 cup
- Dried Cranberries - 1⁄4 cup
- Pumpkin Seeds -1 tablespoon
Creamy Dressing:
- Mayonnaise Eggless - 1⁄4 cup
- Greek Yogurt - 1⁄4 cup
- Lemon Juice - 1 tablespoon
- Sugar - 1⁄2 tablespoon
- Salt - as per taste
- Pepper - 1⁄4 teaspoon
Instructions:
- In a large bowl combine broccoli, carrots, apples, pecans, and dried cranberries. Set aside.
- Prepare the dressing: In a bowl, whisk together mayonnaise, Greek yogurt, lemon juice, sugar, salt and pepper.
- Add the dressing to the salad and toss to coat.
- Sprinkle pumpkin seeds on top to garnish.
Note: Tastes better when served chilled.
